PREPARING FOR MASALA UTTAPAM (step by step) pics

Step 1: Take rice in a bowl and add urad dal, poha.

Step 2: add water in rice and wash it.

Step 3: drain off the rice water and transfer it into mixture jar. Also add soaked poha and ½ cup water. Grind it into coarse and thick batter. Add batter into large mixing bowl.

step 4: Add chana dal, urad dal and roast it for just 2-3 minutes. now in a mixture jar, add soaked urad dal and methi dana. Also add ¼ cup soaked urad dal water and grind it into smooth paste. Add batter into mixing bowl.

step 5: Now add some water and salt in the batter. mix both the batter with hand. Cover and ferment in a warm place for 8 hours. After 8 hours, the batter has doubled in size. mix gently without disturbing the air bubbles. marinate it

step 6: add chopped onion, tomatoes, capsicum, coriander leaves and salt. Mix well. Vegetable stuffing is ready.

step 7: Heat up a pan on medium heat.
Step 8: Brush oil on it.

Step 9: Spread batter on the pan and while it hasn’t dried spread onion and milgai podi powder.

step 10: When lower side is roasted well flip it over and roast well form other side too.
Step 11: When other side is also roasted well take it off into a dish.
Step 12: Milagi podi uttapam is all ready.

Ingredients

  • 2 cup small grain rice

  • ½ cup urad dal

  • ½ tsp methi seeds

  • 3 tbsp soaked poha

  • Water

  • Salt to taste

  • For masala uttapam

  • 2 tbsp oil

  • ½ tsp mustard seeds

  • ½ tsp urad dal

  • ½ tsp chana dal

  • 4-5 curry leaves

  • 1 medium size onion slice

  • Salt to taste

  • Some coriander leaves

  • For vegetable uttapam

  • ¼ cup chopped onion

  • ¼ cup chopped capsicum

  • ¼ cup chopped tomatoes

  • 1 chopped green chilli

  • 2 tbsp chopped coriander leaves

  • Salt to taste

Directions

  • In a bowl add rice and another bowl add urad dal and methi dana.
  • Wash properly and soak for 5 hours adding water as required.
  • drain off the rice water and transfer it into mixture jar. Also add soaked poha and ½ cup water. Grind it into coarse and thick batter. Add batter into large mixing bowl.
  • Now in a mixture jar, add soaked urad dal and methi dana. Also add ¼ cup soaked urad dal water and grind it into smooth paste. Add batter into mixing bowl.
  • Now add some water and salt in the batter. mix both the batter with hand.
  • Take a non stick pan. Once it becomes warm pour a laddleful of uttapam batter in the middle of the pan.
  • To this add the chopped onion, tomato and capsicum and grease the uttapam border with ghee. Press the onion, tomato and capsicum gently into the batter.
  • Let the batter cook a little then add the potato masala and gently press and spread it throughout the uttapam. Finally sprinkle generously with podi powder and let it cook on lower side. Then flip it and cook on side of the masala till it is lightly brown.
  • Serve hot with chutney.
